Introduction

The Glera and Malvasia grapes were harvested on August 26, 2022, with a total of 900 kg hand-picked and collected in 15 kg crates, comprising 675 kg of Glera and 225 kg of Malvasia.

The crates were transported by boat to the mainland and then transferred to Santa Margherita for pressing and vinification.

After resting on the primary fermentation lees until January 2023, the base wine was transferred to a pressurized stainless-steel tank (autoclave) for the second fermentation, where it remained in contact with the lees until January 2024.

This process took place in a new autoclave prototype which, unlike the traditional version equipped with a stirring system, rotates slowly and continuously on its own axis, ensuring a gentler and more delicate remuage process.

Technical notes

Visually characterized by its straw-yellow colour with delicate greenish hues and a remarkably fine, persistent perlage, this sparkling wine opens on the nose with notably fresh iodine-like notes, reminiscent of the sea breeze, accompanied by citrus aromas of bergamot and lemon. These gradually evolve into floral notes of white sweet alyssum and Mediterranean hints of seaweed, with a lingering trail of intriguing spice aromas in the background—a romantic evocation of the Serenissima Republic of Venice’s historic trade relations with the Orient.

Tasting notes

On the palate, the finesse and silkiness of the perlage are confirmed, resulting from the slow, steady remuage on the lees during the prolonged ageing in the autoclave. This process lends dynamism to the wine, while its freshness and juiciness are supported by distinct, enticing saline notes. The finish is made intriguing by the aromatic return of marine, citrus and spicy notes, further highlighting the uniqueness of this vineyard nestled in the heart of a city unlike any other in the world.
