There are sparkling wines considered “classic” and there are others, difficult to imagine, because they are demanding, challenging or simply more courageous, considered “visionary”. The Classic Method Pinot Grigio is certainly one of these rare jewels, one of a kind thanks to the use of a variety, Pinot Grigio, considered unsuitable for sparkling wine production because its DNA is characterized by a low natural acidity.
The challenge and commitment of Santa Margherita is to have identified parcels of high hills that, due to their exposure, altitude and subsoil, can constantly guarantee that “spinal cord”, that acid backbone that our winemakers wisely transmit in this sparkling wine with a seductive sensorial profile for the elegance of the perlage and courageous in the aromatic range, thanks to the odor contribution of an unusual variety and the maturation on the lees for at least 30 months.
A sparkling wine suitable both as an aperitif and on the dishes of a spicy cuisine, which we recommend uncorking with the friends we most admire for their brilliance and curiosity, both to amaze but above all to amaze us.

Tasting notes
This is a sparkling wine that combines elegance with complexity, approachable appeal and depth of sensory perceptions. A deep straw yellow veined by a constant stream of tiny bubbles ushers in the vibrantly cadenced nose of fragrant white-fleshed fruits, lifted by wafts of nuts and medicinal herbs. The palate is mouthfilling yet driven by enough freshness and savouriness to prolong sensations of crunchy fruit that echo the aromatics of the nose.
Food pairings
Superb as an aperitif, Pinot Grigio Metodo Classico also complements fish or vegetable starters and pasta or rice dishes, particularly with succulent sauces. Try it with exotic recipes.
