Introduction
Vinification is in stainless steel tanks at controlled temperatures of 26 – 28 °C with skin contact for one week. During alcoholic fermentation, the wine is briefly pumped over the cap several times a day to encourage the transfer of colour and aroma compounds from the skins. Malolactic fermentation follows immediately. The wine then matures in oak containers for about a year.
